Who doesn't love a recipe that has cheese, cheese, and MORE CHEESE?!?! This Queso on the Grill recipe has all the cheese you could ask for and more. One day, while scrolling through Facebook, I discovered this glorious picture: Like so many other shared posts, I could not find the original creator or even a recipe to go with it! So I spent far too much time dissecting the photo and creating my version of the recipe! I used most everything that was shown in the picture except I chose to swap the jalapenos for green chilies. I chose to use taco seasoning with my beef to add an extra flavor, however that is 100% your choice. The cook time will be dependent on your grill. If you do not have a grill, NO WORRIES! Set your oven to 350 degrees, place the pan in the center of your oven rack, and cook as stated in the recipe. As long as it looks like a swimming pool of cheese, then you succeeded! Isn't that picture just so cheesy on the eyes?! Yes, I just used a cheese pun and I have no regrets!!! I hope you all love this recipe as much as I do! My mother-in-law taught me this delicious recipe and now I make for every occasion. It's always a big hit. The best part is it works as a dip or if you are feeling crazy, a smear for your hot dogs and burgers! You will see I have not listed a precise amount of milk for this recipe as that is really up to you! It truly comes down to how thick you like your dips. Sadly though, do to quarantine, we have not been able to go out and stuff ourselves full with everything we love. So when I got a craving for curry the other day I went on a hunt to find a recipe that REALLY nails the smells and taste, but is something more simplistic I felt I could due justice. Buzzfeed Tasty nailed this Easy Chickpea Curry! Their recipe called for garam masala - which I tried to hunt down, but could not find. I substituted it with curry powder and it worked just as well! In my version, you will also see I have 1 cup of water vs their 1/2 cup. I found that you did need to add more as it will quickly dissolve while it is simmering. I promise the smell alone will have your mouth watering! I give this recipe a 10/10 and recommend you make it ASAP!!! Now if you'll excuse me, I have some leftover curry to eat!! One of our favorites moments during the workday. The time of day we get to step away from our desk and decompress for 30 or so minutes. It's LUNCHTIME!! We always start on Monday with good intentions to pack healthy and most likely over zealous meals. By Friday we are over it, tried, and ordering take out. Okay...let's be real...we do this by Wednesday. I recently had a friend post on Facebook asking how do I pack a more "adult" lunch?! Does anyone even know what an "adult" lunch is?! I mean I still love a good PB&J for lunch if I am honest, BUT I thought today I would share 10 easy and delicious "adult" lunches that are good for both working lunches and sit down breaks! 1. Homemade Salad or Salad Kits! Salads are so easy to put together. I love a salad kit. All you need to pack is the salad package, a bowl with a lid, and a fork. When you are ready for lunch, dump everything from inside the package into the bowl, shake it up, and BOOM you are ready to go! 2. Toast Variations One of my best friends told me that she does different variations of toast for her lunch along with a hard-boiled egg, and some fruit which I think is a GREAT idea. Love & Lemons has some great toast variation recipes you should check out! 3. Egg Scramble Are you a breakfast at all times of day person?! Did you know you can easily make scrambled eggs in the microwave?! All you need is 2 large eggs, 2 tbsp milk, salt, and pepper! In a microwaveable bowl, beat together all the ingredients. Microwave on high for 45 seconds. Stir and microwave for 35-40 more minutes. Mix in some of your favorite sauteed veggies or a bit of salsa, pesto, or herb mixture for added flavor! 4. Lettuce Wraps Lettuce wraps are a great way to have a healthier, but filling lunch. All you need to pack is some lettuce cups and your favorite sandwich fixings. I love using lettuce cups with tuna fish salad! You can find a GREAT tuna salad recipe on The Food Network. 5. Sausage & Vegetables I am a big fan of Al Fresco Sweet Apple Chicken Sausage. You can pack one at a time and heat them in the microwave for a quick meal. I like to pair it with some veggies that I have either prepared the night before or just some yummy carrots, celery, or broccoli with some ranch to dip it in! 6. Grilled Chicken Grilled chicken is a great lunch staple. I will often prepare some grilled chicken on Sunday nights and have it to use throughout the week. You can make sandwiches, wraps, salads, or rice bowls and so much more. All of which are quick to heat up and eat at work. You can find a great grilled chicken recipe on Cooking with Karli! 7. Yogurt Parfaits Who doesn't love a Yogurt Parfait?! You can grab a bistro box to help keep your combinations separate till its time to mix it up for a quick and easy lunch. Plus, if you wanted to do cookies instead of fruit LIVE YOUR BEST LIFE - I won't judge. In fact, I will join you! YUM! 8. Soups & Sandwiches There is nothing more classic than a soup and sandwich combo. It's one of my good to lunch meals. I love packing a can of Progresso's Tomato Basil Soup and a simple turkey sandwich. All you have to do is prep the sandwich the night before or in the morning and bring a bowl to heat your soup in. Easy and simple. 9. Casseroles When figuring out what to put on this list, I had quite a few friends say they love preparing a casserole they can eat a few times throughout the week. You can find SO MANY delicious casseroles on Pinterest. One night of cooking is worth the easy lunch throughout the week! 10. ADULT LUNCHABLES!!!!! My friend recently told me she makes adult Lunchables for herself and honestly I am SO MAD I did not think of this amazing idea before now!! Who doesn't want to throw it back to the simplicity of their childhood?! All you really need is a combination of your favorite meat, cheese, and crackers. You can throw in your favorite fruit or if you are feeling wild - a cookie! I hope this list helps make your lunchtime a little easier and a little more exciting!! I prefer a chewier bacon, so I under cook mine by a minute or two the first round, that way to doesn't over cook when the sauce is simmering.
