Okay...It's time to admit it...Some of us MAYBE went a little food crazy and gained some of that quarantine 20. We all LOVE a good greasy burger of our choice, but too many of those can cause us to not feel so great. So after admitting it this week, I hopped back on the weight watchers train - which means getting creative with my recipes. I know some of you are thinking, "UGH - another supposedly healthy recipe that's just going to leave me hungry after a couple of hours." Well my friends you would be.... These Chili-Rubbed Pork Chops with Spaghetti Squash and Zucchini are SO FILLING, healthy, and not to mention delicious! Growing up, my mom always made this simple and delicious recipe for almost every holiday! It is not crazy or over the top, it is quaint and hits the spot every time. I wanted to share a few tips with you on how to make this easy and delicious.

The filling for this dish is really all about preference! I like a balance of mustard and mayo, but if you prefer more of one thing then the other - just simply shift the amount of each ingredient. It is also okay for the filling to be a little lumpy. If you would like to create the design in the picture - take a piping bag with a 1M Wilton piping head and place filling inside. Pipe the filling into each egg half till full. If you would like to add a kick to your deviled eggs you can add a splash of hot sauce into your filling mixture and sprinkle some paprika on the top of your filled egg! Parents - want to add a little literary and educational fun with this dish? Have your kids help you make this dish and place 3 to 4 drops of green food coloring into the filling when mixing it together. While eating, whip out Dr. Seuss's Green Eggs and Ham. This recipe is a fun way to elevate a boxed macaroni and cheese. It is delicious and better yet - CHEAP. You can get a box of macaroni from any grocery store for about .99 cents! With this recipe, you can use any shredded cheese you would like. I used Meijer Shredded Colby Jack. I promise you every family member will love it. The best part, it tastes amazing the next day. I wanted to share a quick tip for eating it as a leftover. Break up the amount you would like and place it into a microwavable bowl and pour a splash of milk on it.
