Scarves, sweaters, bonfires, pumpkin spice lattes, colorful leaves, corn mazes, a slight nip to the air...Oh fall, how I love you so, and yet you are still so far away! As fall draws closer, I feel myself yearning for it more and more. So last night I decided to give myself a little fall gift and bake these Pumpkin Blondies! Now I am not joking when I say this was one of the BEST desserts I've had. So simple, yet SO GOOD! Here are a few different pointers to help make this recipe as easy as possible for you!

We've all had it, that 10 PM cookie crave! So we crawl out of our blanket cocoon and stumble into the kitchen praying we have what we need to make cookies. I went to do this the other night and low and behold, I was out of few things - thanks quarantine 2020. While staring aimlessly into the cupboard, I remembered a recipe my friend and I use to make as little kids, and thanks to the gallon size jar of peanut butter we have, my cookie craving was satisfied!
This recipe can be rather sticky, so I suggest taking a cooking spray and giving your hands a little squirt. This will keep the dough from sticking to you and allow you to easily shape the cookies. Now I must warn you, this is the MOST peanut buttery peanut butter cookie you will ever taste. So if that's not something you love, I suggest breaking it up with some chocolate. Instead of creating a fork design, press the cookie down with your thumb, creating a mini crater in the cookie. Allow the cookie to bake for about 5 minutes, then place a heresy's kiss in the hole and bake for the remaining time. So grab the peanut butter jar and get baking!
