I am a firm believer that EVERYTHING is better bite-sized. It's just so small, cute, and delicious! Also dangerous...you eat so many...so worth it... So when I stumbled across these mini corn dog muffins I knew I had to make them. This has to be one of the EASIEST recipes I have ever made and not to mention I had everything in my cupboard already! Seriously...there is NOTHING like when you find a recipe online and you already have the ingredients! It just feels like... There are two key things to making this dish delicious!

Who doesn't love a recipe that has cheese, cheese, and MORE CHEESE?!?! This Queso on the Grill recipe has all the cheese you could ask for and more. One day, while scrolling through Facebook, I discovered this glorious picture: Like so many other shared posts, I could not find the original creator or even a recipe to go with it! So I spent far too much time dissecting the photo and creating my version of the recipe! I used most everything that was shown in the picture except I chose to swap the jalapenos for green chilies. I chose to use taco seasoning with my beef to add an extra flavor, however that is 100% your choice. The cook time will be dependent on your grill. If you do not have a grill, NO WORRIES! Set your oven to 350 degrees, place the pan in the center of your oven rack, and cook as stated in the recipe. As long as it looks like a swimming pool of cheese, then you succeeded! Isn't that picture just so cheesy on the eyes?! Yes, I just used a cheese pun and I have no regrets!!! I hope you all love this recipe as much as I do! These corn dogs are easy to make and crazy delicious - something the whole family will love. According to the original recipe, they were able to make twelve corn dogs out of the batter, whereas I was only able to make six. This could be affected by the hot dogs you buy, so start with making six and go from there. One thing I would like to remind everyone about is that hot oil can be very dangerous. So please use caution and tongs while frying your corn dogs. Using a deeper pot will keep the oil from jumping up over the edge. I used an eight-quart dutch oven. The filling for this dish is really all about preference! I like a balance of mustard and mayo, but if you prefer more of one thing then the other - just simply shift the amount of each ingredient. It is also okay for the filling to be a little lumpy. If you would like to create the design in the picture - take a piping bag with a 1M Wilton piping head and place filling inside. Pipe the filling into each egg half till full. If you would like to add a kick to your deviled eggs you can add a splash of hot sauce into your filling mixture and sprinkle some paprika on the top of your filled egg! Parents - want to add a little literary and educational fun with this dish? Have your kids help you make this dish and place 3 to 4 drops of green food coloring into the filling when mixing it together. While eating, whip out Dr. Seuss's Green Eggs and Ham. If you do not like coconut, I suggest white chocolate flakes keep the fuzzy look. Take a bar of your favorite white chocolate and use a lemon zester or cheese grater to shave off some pieces to use!
