I have been using Weight Watchers on and off for a few years now pretty successfully. but when changing your eating habits you sometimes feel like you eat the same bland things over and over again. So when WW released their latest cookbook, I was BEYOND excited! This cookbook has so many delicious looking recipes that I had a hard time deciding where to even start! I am so glad that I chose the Rice-and-Bean Stuffed Peppers! (Mintchef 31) Its healthy, vegetarian, and VERY filling! My version of the recipe above does have a few tweaks to fit with things I could find at the store or that I prefer. Plus, who doesn't love a quick and easy slow cooker recipe?! Stick it in, turn it on, and go about your day! This dish also makes fantastic leftovers. You will be jumping for lunchtime the next day! I hope you love this recipe as much as I do! Leave me your thoughts and pictures in the comments!! Sending you all a little Faith, Trust, and Pixie Dust!! Katie, xoxo Mintcheff, Deborah. My husband and I LOVE international food and we are lucky to live in a place that has a massive variety. Sadly though, do to quarantine, we have not been able to go out and stuff ourselves full with everything we love. So when I got a craving for curry the other day I went on a hunt to find a recipe that REALLY nails the smells and taste, but is something more simplistic I felt I could due justice. Buzzfeed Tasty nailed this Easy Chickpea Curry! Their recipe called for garam masala - which I tried to hunt down, but could not find. I substituted it with curry powder and it worked just as well! In my version, you will also see I have 1 cup of water vs their 1/2 cup. I found that you did need to add more as it will quickly dissolve while it is simmering. I promise the smell alone will have your mouth watering! I give this recipe a 10/10 and recommend you make it ASAP!!! Now if you'll excuse me, I have some leftover curry to eat!! Katie, xoxo *original recipe found at: https://tasty.co/recipe/easy-chickpea-curry-channa-masala#tips Okay...It's time to admit it...Some of us MAYBE went a little food crazy and gained some of that quarantine 20. We all LOVE a good greasy burger of our choice, but too many of those can cause us to not feel so great. So after admitting it this week, I hopped back on the weight watchers train - which means getting creative with my recipes. I know some of you are thinking, "UGH - another supposedly healthy recipe that's just going to leave me hungry after a couple of hours." Well my friends you would be.... These Chili-Rubbed Pork Chops with Spaghetti Squash and Zucchini are SO FILLING, healthy, and not to mention delicious! When reading this you may feel a little overwhelmed, so let me share some tips with you!
I hope you all enjoy this recipe! I found it truly delicious and I honestly cannot wait to make it again. Hopefully, for friends and family...my husband and I miss cooking for people...We miss people...ANYWAYS!!! Leave me your thoughts and pictures in the comments. This Bacon Alfredo Ravioli came from one of those moments! I love to experiment with different pasta sauces, so when I needed to use up the bacon before it was to late I thought WHELP - Here we go!
I prefer a chewier bacon, so I under cook mine by a minute or two the first round, that way to doesn't over cook when the sauce is simmering. Now we've all been in the predicament where we went to eat our pasta with garlic bread and realized we were out! Truly the worst feeling - NO GARLIC BREAD! I wanted to share with you a quick make at home recipe that you can whip up to make with your pasta! Quick Garlic Bread:
I hope you all enjoy this delicious take on a bacon Alfredo sauce. Leave me your pictures and thoughts in the comments! Sending you all a little Faith, Trust, and Pixie Dust! Katie, xoxo There is nothing more horrifying and frustrating than when you look into the kitchen after eating a DELICIOUS dinner and realizing how many pots and pans you've used! Now you have to roll your full tummy into the kitchen and clean - it's truly my LEAST favorite chore. With this recipe, you only have to clean 2 pots!!! The bowl you mix your meat in and the pot you cook THE WHOLE MEAL in! Truly - what a magical thought. For this recipe, I used a large dutch oven to cook in, but really any sturdy pot will do. Now, I'm sure you are thinking "how in the world do I make all my meatballs the same size?!?!" Well, there is always the "eye-balling" it method, but I would love to suggest you use a 2 tablespoon scoop! Also, I found that using finely ground pepper gave these meatballs a small kick which I love, but use the pepper to your taste! This is one recipe that you will be GLAD there are leftovers. My husband and I could not get enough. I'd say they are definitely Swedish Chef approved! Leave me your thoughts and pictures in the comments!

Katie, xoxo *original recipe found at: https://tasty.co/recipe/one-pot-swedish-meatball-pasta One of my favorite places in the world is the ocean - like Moana, it calls me! With the way life is currently, I am REALLY missing the beach. Whenever I go, the first thing I eat is FISH TACOS! So this week, I wanted to bring you an easy and delicious fish taco recipe - that way we can all have a little taste of summer vacation. I chose to use Tilapia for this recipe as it is my preferred white fish, however, you can use any kind you like. Some other popular options are mahimahi, cod, or halibut! If you are not sure which fish season packet to use, I recommend La Perferida Organic Fish Taco Seasoning! Feel free to get creative with your toppings too. Along with the tacos, we ate beef rice, corn, salsa, and chips. If you are feeling real wild - whip up your favorite margarita too!
I hope this dish gives you a little taste of summer! Leave me your thoughts and pictures in the comments! Sending you all a little Faith, Trust, and Pixie Dust! Katie, xoxo Okay! Everyone close your eyes and think back on being a child at the fair - the sounds of laughter, animals, and rides. Games making ringing sounds, cheering you on as you win that stuffed teddy bear you wanted so badly. And the smell of ALL THAT FOOD! These homemade corn dogs brought me right back to those fun times and not just because my house now literally smells like food row at the carnival.
These corn dogs are easy to make and crazy delicious - something the whole family will love. According to the original recipe, they were able to make twelve corn dogs out of the batter, whereas I was only able to make six. This could be affected by the hot dogs you buy, so start with making six and go from there. One thing I would like to remind everyone about is that hot oil can be very dangerous. So please use caution and tongs while frying your corn dogs. Using a deeper pot will keep the oil from jumping up over the edge. I used an eight-quart dutch oven. I truly hope this dish brings you back to the joys of going to the fair! Leave me your thoughts and pictures in the comments! Sending you all a little Faith, Trust, and Pixie Dust! Katie, xoxo *original recipe found at: https://lifemadesimplebakes.com/homemade-honey-corn-dogs/?20190424 I hate to admit it, but I did a thing. I bulk bought during the early days of the pandemic! This now means I am home with WAY too many cans of tuna. So, I did what we all do in this situation and went on a deep dive into Pinterest. That's when I stumbled upon this delicious recipe! My version of the recipe has some changes from the original, but I've posted the link to the recipe I found at the bottom.
The smaller cans of condensed soup can be tricky to get all the contents out, so one thing I do is pour my milk into it, swirl it around, and then pour it into the mixing bowl! I hope you all enjoy this deliciously easy casserole! Leave me your thoughts and pictures in the comments! Sending you all a little Faith, Trust, and Pixie Dust! Katie, xoxo *original recipe found at: https://www.tasteofhome.com/recipes/creamy-tuna-noodle-casserole/ Let me tell you, this was one of the BEST pasta recipes I've ever tasted. My husband could not stop talking about how delicious it was! When making this dish, I used angel hair pasta, but you can absolutely use any kind of pasta with this dish!
Are you not huge on fish? No Worries! You can easily substitute the fish for chicken or zucchini & squash if you are vegetarian! If substituting with chicken:
