This week has been filled with many rainy days, which means it was the perfect time to snuggle under a blanket with a good book and a warm cup of coffee! I would LOVE to say that I like a strong cup of black coffee, but in reality I love a sweet and sugary latte. Which is one of the MANY reasons I love this Snickerdoodle Latte! Not to mention its quick and easy to make! Plus you can individualize it to your preference. I've had a lot of people ask what I use to make my espresso, so I thought i'd share with you about what we have at our home. We use a Nespresso VertuoPlus Coffee & Espresso machine. I could not give this machine a hire recommendation. Though it is a little higher priced - its worth it if you are a frequent coffee/espresso drinker! My two favorite things to eat: bread and cheese! So when I got to combine the two it was like heaven on earth! Seriously - this bread is THAT GOOD! One day I know this will happen, but until then I can drink a French Martini and pretend I am there! Now, the above recipe is the proper mixture, but I like to bump the pineapple up to 1.5 oz and the Chambord to 1/2 oz. You may also be asking yourself - what in the world is Chambord?! Chambord liqueur comes from the Loire Valley of France. It is an infusion of raspberries, blackberries, black raspberries, black currant, Madagascar vanilla, and XO cognac. Though a smaller bottle, it comes at a 16.5% abv! You can find this liqueur at most stores. I was able to find it at my local Meijer! This drink is so good you will make it your go to drink! Katie, xoxo There is nothing more horrifying and frustrating than when you look into the kitchen after eating a DELICIOUS dinner and realizing how many pots and pans you've used! Now you have to roll your full tummy into the kitchen and clean - it's truly my LEAST favorite chore. With this recipe, you only have to clean 2 pots!!! The bowl you mix your meat in and the pot you cook THE WHOLE MEAL in! Truly - what a magical thought. For this recipe, I used a large dutch oven to cook in, but really any sturdy pot will do. Now, I'm sure you are thinking "how in the world do I make all my meatballs the same size?!?!" Well, there is always the "eye-balling" it method, but I would love to suggest you use a 2 tablespoon scoop! Also, I found that using finely ground pepper gave these meatballs a small kick which I love, but use the pepper to your taste! This is one recipe that you will be GLAD there are leftovers. With the way life is currently, I am REALLY missing the beach. Whenever I go, the first thing I eat is FISH TACOS! So this week, I wanted to bring you an easy and delicious fish taco recipe - that way we can all have a little taste of summer vacation. I chose to use Tilapia for this recipe as it is my preferred white fish, however, you can use any kind you like. Some other popular options are mahimahi, cod, or halibut! If you are not sure which fish season packet to use, I recommend La Perferida Organic Fish Taco Seasoning! Feel free to get creative with your toppings too. Along with the tacos, we ate beef rice, corn, salsa, and chips. If you are feeling real wild - whip up your favorite margarita too!

Everyone close your eyes and think back on being a child at the fair - the sounds of laughter, animals, and rides. Games making ringing sounds, cheering you on as you win that stuffed teddy bear you wanted so badly. And the smell of ALL THAT FOOD! These homemade corn dogs brought me right back to those fun times and not just because my house now literally smells like food row at the carnival.
These corn dogs are easy to make and crazy delicious - something the whole family will love. According to the original recipe, they were able to make twelve corn dogs out of the batter, whereas I was only able to make six. This could be affected by the hot dogs you buy, so start with making six and go from there. One thing I would like to remind everyone about is that hot oil can be very dangerous. So please use caution and tongs while frying your corn dogs. Using a deeper pot will keep the oil from jumping up over the edge. I used an eight-quart dutch oven. The smaller cans of condensed soup can be tricky to get all the contents out, so one thing I do is pour my milk into it, swirl it around, and then pour it into the mixing bowl!
